Our normal Sman is aged for two months, allowing it to develop its traditional "tang" and characteristic robust aroma. The process begins with fresh butter, which is carefully clarified and combined with salt. This mixture is then put into a clay vessel and allowed to ferment and age, transforming its nature. The result is a deep-golden, slightly crumbly paste with a rich, developed flavor that defined the traditional dishes of Chef Sara's Moroccan childhood.
This is not a spread, but an ingredient—a powerful and pungent accent that is the soul of Moroccan soul food. It's the flavor that makes a tagine taste truly Moroccan, adding a savory complexity that is impossible to replicate. We craft it in small batches in Al Ain, UAE, ensuring every jar is pure, natural, and free from modern additives.
How to Use it as a Tradition:
Start with a quantity no larger than a pea and increase to taste. A small jar will last a long time.
Sautéing: The high smoke point of clarified butter combined with the deep flavor of aging makes it the perfect starter for any traditional stew or stir-fry.
